Nicole, Operations Manager

While not permanently residing in Peterborough, Nicole is one of our ‘honourary’ Peterborough residents. She spent much of her childhood visiting family and vacationing in the area, falling for the small-town, local feel that she has come to know and love. Raised in the small town of Georgetown, and a recent graduate of the University of Guelph Hotel and Food Management program, Nicole is a passionate cook in her free time. She looks to bring this love for food and business to our little restaurant, focusing on business development, community engagement, and day to day management.

Lanace, Lead Server
Lanace is a native of peterborough, having recently moved back to the area to live closer to her family. She has worked for Gardens & Fields since the restaurant’s launch in May 2015, and has since played a crucial role in the development and training of the Front of House team. Lanace is extremely passionate about her position at the restaurant, and prides herself in going above and beyond her customer’s expectations. Her favourite part of the restaurant is the local atmosphere, and stunning views of aircraft flying in and out of the airport.
